The original shop in this location opened in 1973 and has been a mainstay of this section of Route 53 ever since. The founder of that restaurant began his career at a flour mill company, and became an expert, passing his knowledge down to the current president, Mr. Masaki Sugimoto.
The flour is the most important core ingredient, and preparations begin at 6 am every day. A traditional foot-kneading technique is used to knead the dough, which is then flattened, kneaded again, and flattened, all without machines. This is the secret to their delicious noodles.
